Quick Homemade Refrigerator Pickles

You want homemade pickles without all the canning fuss? This is for you. These are quick, easy, and sooooo tasty. All you gotta do is throw all the ingredients together, mix well, and slap ’em in the fridge . Viola! – pickles -homemade by you. Let’s go!

Here’s the recipe:

Prep Time: 30 Minutes Ready In: 90 minutes Difficulty: Easy Servings: 40

INGREDIENTS:

Put the peeled and sliced cucumbers in a large mixing bowl. I left some of the peeling on – adds color and interest.  Add the salt and mix well.

Put the cukes in the fridge for an hour.  While they are hanging out in the fridge, dice your onion, and measure out your other ingredients. When the cukes are done resting in the fridge, get them out, add the diced onion,

sugar,

vinegar,

and celery seed.

Mix well to make sure the sugar dissolves.  And that’s it – you’re done. Put the pickles in a container and refrigerate. I put mine in canning jars so they look pretty.

Your homemade pickles will keep in the fridge for about 3 weeks, if you don’t eat them all by then.

I doubled this recipe as I’m swimming in cucumbers from the garden. And I used onion from the garden too. So satisfying to enjoy the fruits of one’s labor.
