Chocolate Chip Peanut Butter Crisps

Back in the dark ages when I was a kid, Kix cereal came out with a recipe on their box for cookies made with (surprise!) 4 cups of Kix cereal.

But despite this blatant attempt to make the consumer go through a box of cereal in one day, the cookies were actually quite good. We had these all the time when I was growing up. But I’ve not had them since I was a kid, so it was high time to have them again.

After I made this batch, Harland and I scarfed them down in just a few days.

RECIPE:

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1/2 cup peanut butter
  • 1/4 cup butter, softened  (1/2 stick)
  • 1/4 cup shortening
  • 1 egg
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 4 cups Kix cereal
  • 1 pkg semisweet chocolate chips (6 ounces)

Yield: 3 1/2 dozen cookies

Heat oven to 325 degrees. In a large mixing bowl, cream sugars and butter together until well blended.  Mix in peanut butter, shortening, egg, baking soda and baking powder. Stir in cereal and chocolate chips.

Shape dough slightly by rounded tablespoonfuls and place about 2 inches apart on cookie sheet lined with parchment paper.  Bake until golden brown, about 10 minutes. Remove from oven and cool on cookie sheet for about 5 minutes before removing to a rack to finish cooling. Store in airtight container.

The challenge is to not eat 10 of these.

    These look good. I made your Pumpkin Ginger Bread a few days, using homegrown heirloom pumpkins canned at home. It was fantastic. Husband was working in his shop but stopped long enough to eat almost half at once.

    Never heard of this recipe.The Rice Krispy treats, yes. but this looks like a good recipe to try. Thanks! It’s got chocolate in it! Yum!

    Hm! I’m certainly old enough to have heard of those cookies, but nope! I haven’t!! Maybe it’s because my favorite cereal was Cheerios! And because now I must be on a gluten free diet, I can’t even make these. But I suppose I’ll survive. At least I can make the Rice Krispy Treats. Now, if they’d just make a gluten free Cheerios recipe, I’d be sooo happy!!

      They were predicting 12 inches for us, but we probably didn’t get more than 4 or 5, but any moisture is appreciated. Last winter was abnormally dry and last summer we had a drought so we are still behind on moisture. Corn planting is early April.

    I have seen and heard of Kix but never the cookie recipe. We loved making the no bake oatmeal chocolate ones. Still love those to this day and the no bake chocolate p-nut butter oatmeal ones too.
    Glad to hear you survived the storm I was thinking of you. Yes, we could all use the water.

    I just finished baking these and have to say they are very good! They taste similar to s’mores and have a very unique “airy” texture. I used mini chocolate chips, but otherwise followed the recipe to a ‘T’. Just to mention, they do fall apart very easily straight out of the oven, but firm up very nicely after a couple minutes of cooling. A very quick, simple and yummy recipe! Thank you!
