Chocolate Chip Peanut Butter Crisps

Back in the dark ages when I was a kid, Kix cereal came out with a recipe on their box for cookies made with (surprise!) 4 cups of Kix cereal.

But despite this blatant attempt to make the consumer go through a box of cereal in one day, the cookies were actually quite good. We had these all the time when I was growing up. But I’ve not had them since I was a kid, so it was high time to have them again.

After I made this batch, Harland and I scarfed them down in just a few days.

RECIPE:

Yield: 3 1/2 dozen cookies

Heat oven to 325 degrees. In a large mixing bowl, cream sugars and butter together until well blended.  Mix in peanut butter, shortening, egg, baking soda and baking powder. Stir in cereal and chocolate chips.

Shape dough slightly by rounded tablespoonfuls and place about 2 inches apart on cookie sheet lined with parchment paper.  Bake until golden brown, about 10 minutes. Remove from oven and cool on cookie sheet for about 5 minutes before removing to a rack to finish cooling. Store in airtight container.

The challenge is to not eat 10 of these.
