Chocolate Chip Banana Bread

Perfectly yummy soft banana bread sliced warm and spread with real butter.  Mmmmmmmmmmm….

But-   It can be made even better with the addition of semi-sweet chocolate chips….

Because everything is better with chocolate!

INGREDIENTS

  •  1 1/4 cups all purpose flour
  • 1/2 cup sugar
  • 3/4 cup mashed banana (about 2 bananas)
  • 1/4 cup shortening
  • 1 egg
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup chocolate chips

Yield:  1 Loaf

Preheat oven to 375.

Grease and flour one 9 X 5 inch loaf pan.

In a medium mixing bowl, add all ingredients except chocolate chips

and mix well.

Stir in chocolate chips.

Spread batter into the loaf pan.

Bake 30 minutes or until toothpick inserted in center comes out clean. If not done, reduce oven temperature to 350 degrees and continue baking 5 – 10 minutes or until toothpick inserted in center comes out clean.

Remove from oven and allow to cool in pan.

Or if you can’t wait, cut a slice, spread with butter, and eat warm.

    Hey lady, every time I open your blog page since you switched, the top photo is moved over into the right hand column. I use Firefox to open it with. Any thoughts?

      I would try checking for updates in Firefox. Or you might see if your Java is up to date. Or you might empty your Cache.

      I had this same problem with Firefox, but it has seemed to rectify itself. I opened it, saw the picture to the right, closed it and reopened it and it’s been OK since. Hope it straightens itself out for you.

      I got some video yesterday of a wet newborn and Harland cleaning it up and feeding it cause it’s mother was in a lot of pain after the birth, and I also got some video of young babies going out to the pasture for the first time. All to come this week!
